Are shirataki and glass noodles the same?
Shirataki and glass noodles are different ingredients: shirataki are konjac-based strands, while harusame glass noodles are starch-based. Similar appearance does not make their weights, preparation or cooking instructions interchangeable. Match the exact noodle to the recipe and check current ingredient and allergen information. Follow package directions, keep prepared noodles away from raw-food contamination, and use a thermometer for added meat or poultry; refrigerate cooked leftovers promptly.

What is shirataki made from?
Kikkoman describes shirataki as thin strands of konnyaku: the mixture is formed into threads and boiled until firm during manufacture. Its glossary places them in dishes including sukiyaki and oden. Konjac and konnyaku are useful words to recognize beside “shirataki.” They point toward the ingredient family, but not an exact formulation. House Foods' corporate product overview distinguishes traditional shirataki from tofu shirataki within its range. A shopper should therefore retain the full product name rather than shorten both to “white noodles.” House Foods product overview
Do not assume that a preparation instruction for one packet applies to another format. The ingredient's manufacture is also not permission to eat a particular packaged product without following its directions.
What does harusame mean here?
Harusame refers to glass noodles, also called cellophane noodles. Namiko Hirasawa Chen's ingredient guide describes their use in salads, soups and hot pots, while noting that preparation varies by brand. Just One Cookbook's harusame guide
The starch need not be the same in every product. Japan's Ministry of Education, Culture, Sports, Science and Technology food database includes a dried, uncooked harusame entry made from potato and sweet-potato starches. That is a specified food category, not a universal ingredient declaration for every glass noodle. MEXT food entry
Malony's manufacturer FAQ also describes harusame made from starches including mung bean, pea, potato and sweet potato. The useful comparison is therefore konjac-based versus a specified starch formulation, not “Japanese noodles versus bean noodles.” Check the actual ingredients rather than infer them from translucence.
Which differences matter when following a recipe?

Neither column supplies a replacement ratio. A recipe asking for dried noodles has not asked for the same numerical weight of a wet product, even if both amounts are written in grams.
The first decision is whether you have the ingredient the recipe specifies. Only after that should you consider whether an author-supported alternative exists. “Use whichever noodles you have” is incomplete when the original instruction depends on their preparation state.
Where does Malony fit into the comparison?
Malony is a branded starch noodle, not another word for shirataki. Its current Japanese FAQ identifies potato starch and cornstarch as its main materials. The same page separates dry standard, thick and thin noodles from fresh Malony.
Its listed boiling times are 5 minutes for dry standard, 8 for dry thick, 2 for dry thin, and 1 for fresh. It specifies boiling water for both dry and fresh forms and rinsing the fresh form first. These are the maker's named-format examples, not times for all harusame or for cooking a complete pot containing raw protein. Follow the purchased package if it differs. Malony's current FAQ
This example matters even if you buy none of those products: a brand name alone may still leave the format unresolved. Copy “dry standard” or the corresponding actual format into a shopping request, rather than removing the words that explain the method.
Why are dry and prepared weights not interchangeable?
Malony gives a product-specific illustration: 20–25 g of its dry noodles becomes approximately 100 g after boiling. That is evidence of a change in the state being weighed. It is not a hydration conversion for shirataki, all glass noodles, or a different brand.
Here is an original, fictional record showing the arithmetic problem:

The subtraction is 100 − 60 = 40 g. Nothing in those fictional numbers gives a conversion from A to B. They are not recommended portions, measured yields or a tested recipe.
Write the state next to the number: “dry,” “drained,” or the recipe's actual wording. If the instruction simply says “one packet,” retain the named product and pack size. Ask the recipe author or manufacturer if that information is missing.
Can you substitute one for the other in hot pot?
Not automatically. Our editorial preference is to find a complete recipe written for the noodle you have, rather than transfer only its ingredient weight into another method.
If the original recipe explicitly permits an alternative, read the entire alternative instruction. It may specify preparation separately from the main pot. Do not assume that optional noodles added at the end use the same sequence as noodles included earlier.

Nor does a noodle's tenderness establish that the rest of the meal is cooked. Ingredient identity, preferred texture and food safety require separate checks.
What belongs on the preparation note?
An effective note records the actual instructions, not a remembered result from a different packet:
- Recipe: title and the noodle named in its ingredient list.
- Product: maker, full name, market version and format.
- Measurement: quantity and whether measured dry, drained or otherwise prepared.
- Before the pot: any specified rinsing, soaking, boiling or draining.
- In the pot: the recipe's stage for adding the noodles.
- Unresolved issue: the precise question to ask before cooking.
This is an editorial organizing tool, not a manufacturer's procedure. Keep the original packaging available alongside it. If the package and recipe appear to conflict, seek clarification instead of averaging their times or combining unrelated steps.
Use equipment according to its manual. Boiling water, steam and hot cookware can burn; follow the manufacturer's handling instructions and do not improvise unsafe lifting or draining arrangements.
Are either noodles automatically suitable for allergies?
No category name establishes suitability for every diner. Read the complete ingredients and relevant allergy information on the package in hand, including any accompanying seasonings. A tofu-containing variant is not the same formulation as a traditional version.
The FDA's guidance for packaged foods marketed in the United States says to check labels each time and contact the manufacturer when unsure. Precautionary “may contain” statements are voluntary; their absence is not a guarantee against cross-contact. This describes U.S. labeling guidance, not Japan's legal system. Do not call the whole meal gluten-free or allergen-free based on a noodle's main ingredient. Resolve the broth, sauce and other ingredients against the diner's requirements too. Leave an uncertain product out pending reliable clarification.
What storage and cooking rules still apply?
Keep raw meat and poultry and their utensils separate from prepared noodles and other ready-to-eat ingredients. Follow the exact noodle package's storage instructions before and after opening; an unopened product's shelf life does not become a cooked-meal storage period.
For added poultry, the U.S. minimum is 165°F (74°C), measured with a suitable food thermometer. Reheated leftovers also require 165°F (74°C). Other proteins have their own endpoints; use the appropriate entry in the FoodSafety.gov temperature chart.
Refrigerate perishables within two hours, or one hour above 90°F (32°C), using shallow containers for prompt cooling. Keep the refrigerator at 40°F (4°C) or below. Do not leave a cooked pot out to finish cooling. FoodSafety.gov handling guidance
Its cold-storage chart gives three to four days for refrigerated soups and stews with vegetables or meat. Discard food with unsafe or uncertain handling; reheating is not a way to erase that history.
