This is a Japanese take on a classic French dish, quick and simple to create and perfect for dinner parties or lunch boxes!
Ingredients (makes 8 croquettes)
1 tin of tuna in oil
3-5 small potatoes
Bread crumbs or pan-ko if you can find it
Oil for deep frying
Peel and chop potatoes and add to boiling water. Chop onion and fry together with frozen veggies.
Drain the oil from the tuna can and add the tuna to the frying pan. Fry together on a medium heat until ingredients start to stick together.
Drain potatoes after 10 minutes of boiling. Add salt, a knob of butter and a splash of milk and mash.
Add tuna mix from frying pan and mix together. Season with salt and pepper and Japanese mayonnaise and leave to cool for 15 minutes.
When mix has cooled, use your hands to shape into fat sausages!
Prepare 3 bowls – one with a beaten egg, one with flour and one with the bread crumbs.
Start heating oil in a deep pan. To check the temperature of the oil, use a tooth pick or wooden chopstick and watch for bubbles. Oil should be hot but not boiling.
Add the croquettes to the flour, then tap to remove excess, then to the egg mixture, coating well, then finally to the bread crumbs.
Deep fry each croquette in the oil until golden brown.
Best served with ketchup and Japanese mayonnaise!
