This dish is based on a Gordon Ramsey recipe. It is delicious when served with rice or noodles, and can be seasoned with 5 spice to give it a distinct Asian flavour.
Ingredients (for 2 people)
4 Chicken thighs
1 whole lemon
salt & pepper
Chop the lemon into thick slices and season the chicken while still in the bag. This enables you to mix it up without getting raw chicken anywhere!
Heat a deep pan, then add a decent glug of olive oil. Tip the chickens from your bag into the pan, being careful not to splash the oil. It should sizzle as it fries in the oil.
Flip the chickens when they become white. Now add 1tbs of honey, a swirl of soy sauce, a squeeze of lemon (you should be left with two ends of the whole lemon – use both of these), and the slices of lemon. Reduce the heat and cover for 3-5 minutes.
When the chicken has a slightly browned appearance, cut through the fattest piece to check it has cooked right through. The sauce should have reduced, so use to glaze the chicken when serving.
