This is a very simple but delicious chicken recipe. It is perfect to chop finely and use with fried rice (with onion and egg) or even salad. I like to eat it simply as finger food with rice, or even in raamen instant noodles to make them a bit more substantial. You can also put it in your bento box to be eaten on the go with any accompaniment.
Ingredients
300g chicken thigh
3tbs sugar
50cc soy sauce
50cc rice vinegar
Put all the sauce ingredients into a small pan, heat, then add the chickn and bring to the boil. When boiling is reached, turn the heat down and simmer for 10 mins. Then turn the chicken upside down and do the same for 10 mins. Then turn again, turn the heat up high and cook for 3 mins – this evaporates the liquid and forces the flavour into the chicken. That’s it

my friend taught me to make this. but then i added ginger for my husband. and baked it long for my children, to make it very very soft (45 min, 350*). i still like it the first way best, i think.
