Here’s another donburi (white rice in a bowl) recipe which is a favourite in many Japanese households. We normally make this with any leftovers from other tonkatsu recipes. If you’re a fan of these simple to make, healthy donburi recipes, make sure you check out the magurozuke don, mabodofu don and the oyako don.
Ingredients
Leftover tonkatsu
1 small onion
150ml water
3/4tbs fish stock
1tbs sugar
1tbs sake
2tbs mirin
3tbs soy sauce
3 eggs
Spring onion (optional)
Step 1





Time to put to use your left over tonkatsu from my recipe here! Slice it up along with a small onion, then put the water, sugar, fish stock, sake, mirin and soy sauce in a pan over medium heat. Add the onions and simmer gently for 3 minutes with a cover on the pan. Then add the tonkatsu and continue to simmer until the sauce has been soaked up.
Beat the eggs and pour half of them into the pan. Allow to harden slightly, then remove the pan from the heat and slowly add the rest of the egg mixture. This will ensure the eggs don’t harden too much. Pour the contents of the pan over a bed of hot white rice.










One thing, though: you have a different idea of “easy to make” than I do! These are in no way easy to make. Or, rather, they’re not easy to make well. Katsudon with overcooked, hardened eggs: that’s easy to make. Katsudon with drenched soggy cutlet that has been smothered with too much sauce: that’s easy to make. But perfect runny crispy sweet salty delicious Katsudon that’s just right: that’s not at all easy to make!
