This dish is perfect for summer and everyone loves it, especially children. It is very simple, cheap and healthy. You may find other recipes elsewhere for this popular dish, but I guarantee mine is the quickest and easiest to prepare. It requires harusame noodles (cellophane noodles or bean thread noodles) which you can find in any Asian supermarket.
Ingredients (for 3-4 people)
1 small cucumber
2 rashers of bacon
60g harusame or cellophane noodles (bean thread noodles)
4 tbs soy sauce
4 tbs rice vineagr
2 tbs sesame oil
1 cup water
1 egg (optional)
Slice the bacon, cucumber and carrot into long strips.
Heat a frying pan, and drizzle a little oil, then pour a beaten egg in to create a pancake. Then tip it onto a plate to cool. When it has cooled completely, cut it into strips like the veggies.
Add all the all the sauces, sugar, water into a pot along with the bacon, carrot and noodles. Just leave out the cucumber, egg and sesame seeds. Heat until boiling, then cover and turn off the heat, waiting until it becomes cool.
Chop the egg, then add all the remaining ingredients and mix. Place into the fridge until serving.
