This recipe is not strictly Japanese but occasionally on Sumo Kitchen I will include recipes that I have found delicious in the past. If you have a pressure cooker, you can make this in half the time and probably get much better results than I did. I love this dish since you can use very cheap cuts of pork but create something I guarantee you will love!
500g pork ribs
2 ripe tomatoes
50ml balsamic vinegar
3 cloves garlic
1 chicken stock
1-2 tsp honey
Salt & White pepper
Lay your pork ribs on a plate or leave them in the plastic dish in which you bought them. Sprinkle well with salt, flour and pepper on both sides.
Slice the garlic in 2 and fry in olive oil. When the garlic starts to change colour, remove (but place aside for later)and insert the pork ribs on a medium heat. Fry untilbrown/ golden on both sides. Then add the balsamic vinegar and boil until it evaporates almost completely.
Chop the tomatoes and add to the pork along with the garlic from earlier. Then add the chicken stock to 200ml hot water and pour over. Add the honey and stir well. Cover and simmer gently for one hour over low heat. If you don’t have time, simmer over a higher heat for 20 mins.
Serve with mash potatoes.
